And nestled right in the midst of all this? Buena Vida Burger Shop, home to a burger that was calling my name from day one: the Indian Burger.

I first wandered into Palma Central on a breezy night in October. After a day of exploring Veleta Market in the Veleta neighborhood, some new friends invited me to a salsa night here. As soon as I walked in, I was captivated. Palma Central’s energy hits you right away — it’s a garden of food trucks encircling an outdoor dance floor, local vendors peddling everything from handcrafted jewelry to essential oils, and the sounds of soulful Latin beats pulling you in. That first night, I started slow with a Pacifico and some Argentinian empanadas under the stars. But it didn’t take long for the Buena Vida Burger Shop’s Indian Burger to start haunting me.

Buena Vida Burger is self-described as “plant-based,” but don’t let that fool you into thinking they only cater to vegans. The menu is playful, creative, and inclusive of both meat and vegan options.
